I LOVE steel cut oatmeal. For a long time, I was buying the frozen steel cut oatmeal packets at Trader Joe’s. They’re super convenient, but they can get pricey if you eat them everyday. In effort to reduce my grocery bill (and in turn have more $$ to spend on stuff I don’t need), I came up with this simple recipe. Not only is this recipe easy, but it’s also versatile – you can adjust it to fit your taste.
The recipe makes 6-8 servings – the oatmeal ends up being pretty thick so I usually add some water before heating it up.
You’ll need the following:
- 1 cup Trader Joe’s Steel Cut Organic Oats
- 1 cup Trader Joe’s Multigrain Hot Cereal
- 3 cups almond milk (or milk of your choice)
- 3 cups water
- 1/4 cup dried cranberries
- 1/4 cup candied ginger
- 2 tsp cinnamon
- 1/4 cup brown sugar
First, add 3 cups of water and 3 cups of milk in a large saucepan and bring them to a boil. Once the mixture boils, drop in 1 cup of hot cereal and 1 cup of steel cut oats.
Continue to keep the mixture boiling for 5 minutes or so, until the oatmeal thickens. Then, lower the temperature and allow the mixture to simmer uncovered for 25-30 minutes. Make sure to stir every once in awhile to ensure nothing sticks to the bottom of the pan. Add the cinnamon & sugar at around 20 minutes, giving the oatmeal time to soak in the flavor. While the mixture is simmering, start chopping up the dried cranberries & candied ginger.
Once the oatmeal is complete, remove it from the burner and mix in the dried fruit. DONE. You now have oatmeal for the entire week…it’s absolutely DELISH.
You can also add nuts, other varieties of dried fruit, flax seed, etc. I’ve actually tried this same recipe with dates and it turned out amazing. The options are limitless.
